How to Brew the Perfect Cup of Black Tea
Warm the teapot by filling it with hot tap water and letting it sit while
you boil the water and fill the infuser.
Measure tea into infuser: (one teaspoon of tea per 5-8 ounce cup, plus one for the pot).
Put cold water into kettle and heat to boiling (212 degrees F). Empty tap water from pot, insert infuser and pour boiling water over the infuser. Cover and let tea steep for 4-6 minutes. The better quality, whole leaf teas require longer steeping to release full flavor.
If you are brewing in a cup, insert the infuser or filter bag and pour hot water over it: this ensures a full brew. Never pour the water in first and then insert the bag or infuser.
Remove infuser when tea is to strength that you prefer. If using a pot, cover it with cozy or wrap it in a towel to keep warm.
TIP: If you prefer milk in your tea, warm the milk in the microwave for about 15-25 seconds. Pour the milk into the cup first, followed by the tea so that the milk solids blend well.
How to Brew the Perfect Cup of Green Tea
If you are using a teapot, Warm it by filling it with hot tap water and
letting it sit while you heat the water and fill the infuser.
Measure tea into infuser: one teaspoon of tea per 5-8 ounce cup, plus one for the pot.
Put cold water into kettle and heat to boiling (212 degrees
F). Let water cool off for three to four minutes to 175-degrees F.
Empty tap water from pot, insert infuser and pour water over the
infuser. If you are using a multi-temp Zojirushi pot, set at 175
degrees, it will bring the water to the boil, let it cool to 175 degrees
and hold it at that temperature.
If you are brewing in a cup, insert the infuser or filter bag and pour hot water over it: this ensures a full brew. Never pour the water in first and then insert the bag or infuser.
Let tea steep for 30 seconds to three minutes depending on your
taste. White teas have the shortest steeping time.
Higher- quality, whole leaf teas require longer steeping
(up to 3 minutes) to release full flavor.
Remove the infuser or bag when tea is to strength that you prefer. Cover pot with cozy or wrap it in a towel to keep warm.
TIP: You may add tepid water to the tea leaves several more times—each time you’ll get a different tea experience, as is done in China.
